My PhD is investigating public acceptance of insects as food in the Netherlands and the UK. My main focus is on how currently available insect-based foods are integrating with existing practices of shopping, cooking and eating. I'm also interested in the way in which insects are positioned as a more 'ethical' food source than other animal proteins.
