Oriental Brewery Co. will repurpose byproducts of the brewing process called brewer’s spent grain (BSG) into creating healthy snacks such as energy bars, granola, and other cereals.
BSG or draff accounts for up to 85 percent of brewing waste.
The brewing process consists of malting, mashing, lautering, boiling, fermenting, conditioning, filtering, and packaging.
While BSG is an excellent source of high-quality protein and fiber, but regulations in South Korea's beer industry limited its use to brewery products.
The regulations were relaxed in July, allowing new opportunities to diversify our businesses and develop a new revenue stream from BSG.
Oriental Brewery, South Korea’s largest beer maker, would team up with REharvest Co., a South Korean food upcycling venture for the project.
