Blommer Chocolate Co. has entered a commercial partnership with Israeli-based DouxMatok to produce and sell a portfolio of chocolate products with less sugar, made possible by enhancing the perception of sweetness.
DouxMatok offers Incredo sugar, which allows formulators to reduce sugar in their products without compromising on taste, texture, or sweetness.
The initial product that the companies would offer is a chocolate-flavored chip with 50 percent less sugar, fewer calories, and more fiber than traditional full-sugar chocolate chips.
The chip will be available to Blommer customers in North America.
The partnership intends to offer new products in confectionery, baking, and dairy.
Ari Melamud, CEO of DouxMatok, explained that Incredo sugar is cane sugar that is structured differently and delivered to the taste receptors more efficiently.
Melamud added that promoting delicious taste and enhanced nutrition while simultaneously improving the health and well-being of consumers are the milestones in leadership in the sugar reduction space that would catapult the industry into the next phase of the food revolution.
