Famed Danish restaurant Noma will shut down by the winter of 2024 and re-emerge as a pioneering test kitchen called Noma 3.0 in 2025 when it will be dedicated to “food innovation and the development of new flavors.”
Noma, which opened in 2003, has grabbed two Michelin stars and was three times voted the world’s number one restaurant by Britain’s Restaurant Magazine in 2010, 2011, and 2012.
According to the Copenhagen eatery, they would transform into a giant lab that will share the fruits of their efforts more widely than ever before.
Chef Rene Redzepi, Noma’s chef, and co-owner revealed that they will travel to search for new ways to share their work and said there could be “a Noma pop-up.”
However, Redzepi is not committed to anything, Berlingske, one of Denmark's largest daily newspapers.
Another major publication, Politiken said Nomo’s facility in Copenhagen will be transformed to develop products to the Noma Projects line - fermented sauces, cooking classes, and an online platform.
